Each season has its food all-stars (think asparagus in the spring and heirloom tomatoes in the summer), but fall brings my favorite ingredients and cooking. You have all types of gourds and squash, Honeycrisp apples, and basically all of the veggies to make amazing roasted vegetables. Since I tend to like warm things in the fall and winter (I always switch over from iced coffee to hot when the leaves start to fall), I love starting my day with a warm bowl of oatmeal. It’s healthy but doesn’t taste like it (which is the best kind of food), and keeps me full for hours.
1 c. Rolled Oats
2 c. Almond Milk
1 Large Banana, mashed (or 2 small bananas)
pinch of salt
Optional: 1 tsp. Cinnamon and/or 1 tsp. Vanilla Extract
Bring the oats and almond milk to a boil over medium high heat. With a whisk, stir in the mashed banana and lower the heat to simmer for about 5 minutes (they’re done when they reach your desired consistency). Stir in the vanilla and cinnamon (if using), and then portion into two bowls. Add your toppings and enjoy!
Toppings: I usually add some kind of nut (almond, pecan, macadamia) and sometimes shredded coconut, chia seeds, dried fruit, jam/preserves, plain yogurt, peanut butter, etc. The options are endless!
